Hoogste score in de 360°Eat Guide
Sinds 2023 staan we vermeld in de 360°Eat Guide. Dit is een restaurant gids voor duurzame gastronomie. Dit jaar hebben we maar liefst 3 cirkels gehaald. Dit is de hoogste score die zij hanteren voor duurzaamheid.
“A rating of three circles indicates mastery in all areas of sustainability – environmental, social, and economic. Sustainability efforts characterize all aspects of the restaurant – locality, seasonality, food waste, recycling, relationships with farmers, economy, policies, and employees’ development and well being – in a thoughtful, genuine, and completely natural way.”
Voor gastronomie hebben we een score gehaald van 81-85 punten van 100.
“The points represent the quality of what is served – presentation, flavor, composition, texture, savoir-faire, seasonality – along with service, knowledge, and environment.”

Just outside Amsterdam, you’ll find this restaurant powered by sun, wind, and water, continuing to lead the way toward a more sustainable and transparent gastronomy. Ingredients are often sourced from the surrounding areas, and frequently homegrown, with a clear identity that the restaurant is keen to highlight. On the occasions when meat and fish are served, they make a point of addressing issues related to animal welfare and the sustainability of the fish stocks. This is a gastronomy grounded in strong, thoughtful values and clear guidelines.
